This recipe came about because my Dad came to visit and we all picked teeny tiny apples off my very young apple trees. We were so excited to get them and it got me thinking. How could I use these tiny apples? The answer, of course, is apple butter. You can use almost any size apple as long as the flavor is there.

Speaking of apple cultivars, my Dad told me to Google the disappearance of his favorite apple: the Jonathan apple. It’s so funny to think that there are probably thousands of varieties of apple, and we have such a limited selection at the store.

  • 6 pounds apples (12 large or 18 medium)
  • 1 cup 200 g brown sugar (light or dark)
  • 1 cup 200 g granulated sugar
  • ½ teaspoon sea salt or Kosher salt
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger or 2 teaspoons grated fresh ginger
  • ½ teaspoon ground cloves

  • Prepare the apples. Peel, core, and roughly chop the apples. Put the chopped apple in a Dutch oven or large pot on the stove.
