Hey Justin! Always a pleasure to have a fellow grilling ninja (and salmon purist) on the site – and we all appreciate your wisdom on NOT flipping that salmon. On a side note, have you worked much with salmon steaks (cut crosswise)? That’s where I’d go for a double-sided sear because those steaks are like 2 inches thick.
