I understand that a lower pH is more acidic. To summarize my point: If you don’t want to use lemon (which is highly acidic and great for thickening dairy), you have to use something at least as acidic as a tangerine for this cream to set properly. I would not recommend a navel orange. Sorry if I confused you.

This is incorrect – a lower pH is more acidic. Neutral is 7.
