Riz, I&#039;m glad you think ricotta is a natural choice in flan. I hear you on the cookie front. You&#039;ll need a little breather before embarking on flan:) When you&#039;re ready, I hope you give it a try. By the way, I&#039;m definitely going to make your Japanese pancakes (of course following your recipe to a T)...and had the pathological need to modify it by adding some sweet adzuki beans. I&#039;ll let you know how it goes. Stay tuned; it may be a couple months out.]]></description>
