Riz, I’m glad you think ricotta is a natural choice in flan. I hear you on the cookie front. You’ll need a little breather before embarking on flan:) When you’re ready, I hope you give it a try. By the way, I’m definitely going to make your Japanese pancakes (of course following your recipe to a T)…and had the pathological need to modify it by adding some sweet adzuki beans.
