It’s true! Store bought ready-made cupcakes are so expensive. Even though I needed to replenish my gf flours for this recipe, I’ve already made 3 cakes for $30, and I still have plenty of flour left-over. I’m sure an ice cream cake costs about $30 these days.

Lemon flavored Ice cream with the slightest bit tart. It was such a treat. The ice cream was so smooth and creamy, so much better than store bought. I stopped into a gf bakery for a small loaf of bread, $9.00 and of course my 3 year old grand daughter wanted a cupcake, $3.00. This gf recipe is more affordable that store bought anyway. Such an indulgence for those of us who have to be mindful about every little thing we eat.
