Susan, You made some good points. Even after several rounds of editing, I agree that this recipe could be more specific. I’ve made chilaquiles so many times that I sometimes forget that not everyone has:) I’ve updated the recipe card to include the exact amount of cheese per tortilla. In a 1/2 cup over 8 tortillas, that’s 1 tablespoon per tortilla. I’ve called for 4 eggs total. That’s 1 egg, 2 tortillas, and 2 tablespoons of cheese per serving plate. In case you don’t know, this recipe is versatile and you won’t negatively impact the outcome if you stray a bit from these proportions. Feel free to increase the cheese or eggs as you like.
